This recipe was inspired by VelvetGh0st who is also known as Gabriella Lindley on YouTube, on her video she created Toblerone cookies, and i'm not a huge fan of Toblerone so i decided to use the same recipe and she used but instead use my favourite chocolate which is Galaxy :), if you are from another country i think this chocolate is just sold in Britain but i could be wrong, but i think this recipe works with any chocolate.
Stuff you will need:
Weighing scales,
A Jug,
A Mixing Bowl,
A Wooden Spoon,
Measuring Spoons,
2 Baking Trays,
Grease Proof Baking Paper,
A Sieve,
A Pastry brush,
A Ice-cream Scoop/ A Spoon,
And A Whisk
Ingredients:
100g Butter,
50g Caster Sugar,
50g Icing Sugar,
1 Egg,
1/2 Teaspoon Vanilla Extract (optional)
100g Plain Flour,
1/4 Teaspoon Salt,
1/4 Teaspoon Baking Powder
Big Bar of Galaxy Chocolate (or chocolate of your choice)
This recipe makes 12 cookies.
Steps:
1. First step is to preheat your oven to 180'C or 350'F,
2.Put 100g of butter into your mixing bowl a long with 50g of Caster sugar and Icing suger and after you have done this whisk those ingredients together until it looks fluffy and yellow like this:
3.Crack your egg into a jug and whisk until the egg yolk and white is mix all together
4. Then place 3/4 of the egg into the mixture which you have created and just mix that all in together,
5. This is when you have to add your 1/2 teaspoon of Vanilla Extract if you wish i didn't because i didn't have any but they are just as good without
6.Next you want to measure out 100g of Plain Flour and add 1/4 teaspoon of Salt and 1/4 teaspoon of baking powder into your flour, then sieve your flour mixture into the mixture you have already created,
7. After you have add all of the ingredients together you then want to mix that mixture all together, this is when you add the rest of the egg that you have left if you feel the mixture is too dry.
It should look a bit like this:
8. Next you want to start cutting up your chocolate pieces this is totally up to you depending on how big you want your chocolate chunks to be, this was mine:
9. After you have cut up your chocolate you want to add it to your mixture and mix it all together so that the cookie dough, is filled up with the chocolate chunks:
10. The next step is to line to baking trays with grease proof paper, all you need to do is to spread butter or margarine with a pastry brush onto the baking trays and then place the grease proof paper onto the baking trays. This is so that the cookies don't get stuck onto the baking tray when they are cooking:
11. After you have done this you will need to scoop the cookie dough in small even pieces onto the baking trays, with clear gaps so that they don't stick to each other, for me this mixture made 12 cookies:
12. Lastly you need to place the trays into your oven and wait for 12 minutes:
Wait for them to cool down for about 10/15 minutes and then...
